Restaurant labour cost in Nevada
What drives labour cost for a multi-unit restaurant operator in Nevada — and the reporting problem that makes most NV labour percentages read lower than reality.
What decides labour cost in Nevada

Nevada does not permit a tip credit. Every hour is owed at least the full state minimum before tips, which makes NV labour percentages structurally higher than in tip-credit states. Comparing a NV location against one in a tip-credit state on labour percentage alone will always flatter the second.
Nevada applies daily overtime. Overtime can be owed after a set number of hours in a single day, not only after 40 in a week. A scheduling system that only totals weekly hours will miss it entirely — and it surfaces at payroll.
Wage and hour rules change and vary by city as well as state. Nothing on this page is legal advice — confirm current requirements for each of your NV locations with counsel or the state labour department.
Why your NV labour percentage is probably understated
Whatever the wage rules, the same reporting failure appears in almost every multi-unit group we connect, and it has nothing to do with Nevada specifically.
Your point of sale knows every person who has clocked in. Your roster knows every person you employ. These lists are never identical — staff get added at the till during a rush, names differ between systems, old logins linger. Anyone on the POS list who is not linked to a roster record has their hours and cost reaching no report at all.
Missing hours make labour look lower, never higher — which is what makes it dangerous. Nobody investigates a good number.
Three checks for a NV operator
- Coverage. Total hours worked from your POS, divided into the hours that appear in your labour report. If it is not near 100%, everything downstream is understated.
- Threshold visibility. Can you see, on Wednesday, who is approaching an overtime threshold across all your locations — not just this one?
- Definitions. Do all your NV sites treat salaried managers, comps and delivery commission the same way? If not, your league table ranks your accounting.
