Why this happens to almost everyone

Your point of sale knows every person who has ever clocked in on it. Your roster knows every person you employ. Those two lists are never identical — people get added at the till during a rush, names are spelled differently in two systems, old logins are never retired, and terminal accounts look like people.

Anyone on the POS list who is not linked to a roster record has their hours and cost reaching no report at all. The consequence is not that a number is missing. It is that every labour percentage you have ever been shown is calculated on an incomplete set of hours, and therefore reads lower than reality.

What good looks like

Labour cost coverage of 100% — every hour worked has a cost attached. In a live twelve-store deployment the figure started at 67.9%, with 257 unmapped employees carrying 1,253 unattributed hours in the trailing 90 days. Linking them is a one-off task that applies retrospectively to every hour those people have ever worked.
